Want something unique? We can provide an extensive list of craft cocktails with an added Monarch twist, like our smoking old fashion. Made with reposado tequila, vanilla, burnt caramel, cocoa nib, sour cherries, and aromatic bitters. Served with sandalwood smoke bellowing from the glass. Want something unique only to your event. EXECUTIVE CHEF – DANNY TRACE

Chef Danny Trace comes to Monarch Hospitality with decades of experience, Also currently serving as Executive Chef of Potente and Osso & Kristalla, downtown’s hottest new Italian concepts.Chef Trace received his formal education at the culinary arts program at Johnson & Wales University in Rhode Island. Trace then perfected his skills under Chef Jamie Shannon and mentor Ella Brennan in the kitchen of Commander’s Palace New Orleans. He later worked as Executive Chef at Café Adelaide and Commander’s Palace in Destin before coming to Brennan’s of Houston. In 2016 He was named the My Table Chef of the Year.
